Fresh Kale Salad
(Raw Foods, Vegetarian)

Organically grown: curly kale, cherry tomatoes, white onion, lemon thyme, basil, parsley

In a big bowl add 1 lb of chopped kale (stems removed). Add 2 T minced lemon thyme. Massage until kale is slightly wilted.

Add small chopped onion, 1 T basil, 1 T parsley and massage again. Next add 1 pint chopped tomatoes.
Toss, let rest for 30 minutes, and then serve.
Can be kept in refrigerator for two days – toss before serving.

Kale is considered to be one of the most highly nutritious vegetables, with powerful antioxidant properties. One cup provides nearly the same amount of vitamin C as an orange. Kale is high in lutein, and an excellent source of vitamin K.
